Spinach Soup with roasted potatoes… acompanied by a mixed salad…

Went for a walk in the afternoon to one of my favourite shops close to my house, a working organic farm Dottenfelderhof,  always gives me great joy to go there.

I picked up some small things, including fresh watercress… thinking to prepare a good salad for dinner.  As I came back home, I saw that my oldest daughter had being cooking and had left the package of frozen spinach right there over the countertop.  It was dripping and of course defrosted.

So dinner was decided… “Spinach soup with roasted potatoes as garnish.  I use roasted potatoes instead of the traditional bread croutons. Accompanied by mixed salad (including the delicious watercress I had just bought) with feta cheese and honey mustard salad dressing.  Most of my recipes are calculated for 4 people.

Spinash soup

Ingredients:

 

  1. 250 gr. of defrosted spinach
  2. 2 medium onions
  3. 3 cups Vegetable stock
  4. 3 table spoons of fresh cream.
  5. Salt, pepper and nutmeg to season.
  6. 4 small potatoes for garnish

Preparation:

Fried the onions in some olive oil, once they are transparent and a bit brown, add the spinach, season with nutmeg, pepper, let it incorporate for a couple of minutes.  Add the vegetable stock.  Let it simmer for 5 minutes, and blend with a hand blender.  To finish taste for salt, pepper, and add fresh cream… ready.

For the roasted potatoes, just cut them in small pieces, cover them in flower and fry them in a small amount of oil.  I use a non-stick roasting pan, to use as little oil as possible.

Mixed salad with feta cheese and honey mustard dressing.

 

A mix of fresh greens including watercress… organic cheery tomatoes, thin sliced mushrooms, and feta cheese. 

Honey mustard dressing

  1. 4 table spoons of olive oil
  2. 1 table spoons of balsamic vinegar
  3. 1 table spoon of vinegar
  4. 1 tea spoon honey
  5. 1 tea spoon Dijon mustard
  6. salt and pepper

This is my basic honey mustard salad dressing, you can add more of any of the ingredients to your own taste.  When I want a creamy finish, I add a couple table spoons of natural yogurt, and sometimes I add a small piece of chopped garlic… depending on the mood.  The recipe can be doubled, or customised to your own taste…

Dinner was a success, and inspiration came from the carelessness of my beautiful daughter… proven that inspiration can come from the most interesting places…❤️
